Let's Get Ready to Ripple!

Vanilla Rainbow Sprinkle Muffins

All you need:

1¾ cups all-purpose flour

½ cup organic cane sugar

2 tsp Hy-Vee baking powder

½ tsp salt

1 cup Ripple Half & Half

2 tsp Hy-Vee vanilla extract

1/3 cup neutral oil

1 tbsp apple cider vinegar

1/3 cup rainbow sprinkles

All you do:

  1. Preheat oven to 350°.
  2. Grease a muffin pan or fill with cupcake liners.
  3. In a medium bowl, whisk the flour, sugar, baking powder and salt together.
  4. Add in the half & half, vanilla extract, oil and vinegar; mix well to combine.
  5. Add in most of the sprinkles, reserving some for the tops, mixing only a few times (the sprinkle colors will begin to bleed so be sure not to over-mix).
  6. Add a little less than ¾ cup of the batter to each muffin cup.
  7. Add remaining sprinkles to the tops and bake for 12-15 minutes.

Sweet Cinnamon Latte

Serves 1

All you need:

¾ cup cold brew coffee

3 tbsp Hy-Vee honey or maple syrup

1 tsp Hy-Vee cinnamon

¼ cup Ripple Half & Half

1 cup ice

All you do:

  1. In a Mason jar, add the coffee, honey and cinnamon; shake vigorously to combine.
  2. If using honey, it is very thick so don’t be afraid to shake hard.
  3. Pour into a glass filled with ice, then top with half & half and a sprinkle of cinnamon.
